First, understand that contrary to popular opinion, a gas oven is no more dangerous than an electric oven and stovetop. Both are designed for safe use within the home. While it might seem intimidating when it's new, it is still safe to use when used properly.
Gas powered ovens are also more efficient and will heat and cool quicker than an electric oven. This is something to keep in mind when pre-heating your oven as well. When using your gas powered oven, you should fist turn the knob that controls the heating element to the desired temperature that you want. You turn the gas up and create more heat by turning the knob clockwise. Turning the knob counter-clockwise will reduce the heat and cool the oven. This will also be labeled on your oven controls. Allow the oven to preheat to your desired temperature. Many ovens have a digital readout that will tell you when the oven has reached this desired temperature. Others will also beep at you to alter them. Some of the gas double ovens have even more features.
You might also have another knob set to bake or broil which you can choose from accordingly. When the oven is preheated, just put your food inside just like you would with an electric oven. Set the timer and cook the food the way that you normally would. After cooking, remove the food carefully and turn off all of the knobs on the oven.
If you have a self-cleaning gas oven, you should use this feature according to the instructions that came with your oven. If there are large pieces of food or debris in the oven that have spilled, wait for the oven to cool and then clean this out first before using the self cleaning function. This prevents large chunks of food from getting cooked in, making it harder to remove. Some ovens even have programs that help with gas oven troubleshooting.
Commercial ovens are often gas powered. Sometimes this is because of the way the manufacturers have constructed these larger commercial ovens but often it's also because they are cheaper to operate. The restaurant or other commercial business needs to be able to save costs wherever they can and the oven might be a great way to do it. This is also why we see gas used in industrial locations.
There are some downsides to gas ovens, as with anything. For example, they often cost more, especially when you go with the higher end brands and self cleaning versions. However, natural gas is typically cheaper than electricity so opting for a higher purchase price upfront can save you money in the long run in operation costs.
